Ingredient of Fermented Rice Noodle in Pork Rib Soup (Kanom Jean Nam Ngeaw)
1. Rice Noodles 1/2 kg.
2. Soft Pork Rib 1/2 kg.
3. Minced Pork finely chopped 1/2 kg.
4. Curdled Blood of Hogs 1 piece
5. Tomato cut half or cut into small pieces 1/2 kg.
6. Dok-Ngiew 30 Grams
7. Salt 1 Tbsp.
8. Oil 2 Tbsp.
9. 8 cups of Water
10. 10 Large dried chilli clean – slit - remove seeds - chopped - put in water
11. Celery root sliced 1 Tbsp.
12. Galangal finely chopped 1 Tbsp.
13. Fresh Turmeric finely chopped 1 Tbsp.
14. Lemongrass chopped 2 Tbsp.
15. Shallots chopped 1/4 cup
16. Garlic chopped 3 Tbsp.
17. Salt 1 Tsp.
18. 1-2 Tbsp. 2 pieces Fermented Soya Bean or pounded black salted bean paste

19. Pickled cabbage 1 cup
20. Bean Sprouts 200 grams
21. Spring Onion, coriander chopped 1/4 cup
22. Lemon cut in small 3 parts
23. Garlic chopped - fry 1/4 cup
24. Dried chili fried crispy or ground pepper
How to Cook Fermented Rice Noodle in Pork Rib Soup (Kanom Jean Nam Ngeaw)
1. Clean pork rib in the pot. Add 8 cups water and leave it for 15 minutes. Spoon the bubbles out. Heat over low heat and simmer until soft.
2. Pounded spices finely. Then put the grilled bean and mix well together.
3. Heat oil in the pan. Add the mixture of beans and spice to fry. Add minced pork, tomatoes and stir to combine. Then add the water from boiling pork.
